Brown Butter Carrots

  • 2 lbs carrots (cut into bite sized pieces, or baby carrots)
  • 1/2 cup butter (1 stick)
  • 3 TBSP honey
  • 2 garlic cloves
  • 1/2 tsp salt (or to taste)
  • 1/4 tsp fine ground black pepper
1) Preheat oven to 425°F.

2) In a medium saucepan, brown the butter over medium high heat (I use "6" on my stove). Whisk constantly.

3) Once the butter is a golden brown, add honey and garlic and remove from heat.

4) Add carrots to a 9x9 baking dish and cover with brown butter sauce.

5) Season with salt and pepper.

6) Cover with foil and bake for 15 minutes. Remove the foil and bake for another 15 minutes, until the carrots are tender. Serve.
