- 2 racks baby back or spare ribs
- 1/4 cup dark brown sugar
- 1 TBSP coarse sea salt
- 1 tsp fine ground black pepper
- 2 tsp paprika
- 2 tsp garlic powder
- 2 tsp onion powder
- 1 tsp ground mustard
- 1/2 tsp cayenne powder
- 1 cup apple cider
- 1/4 cup brown sugar
- 3 TBSP butter
- 1/2 cup BBQ sauce
2) Mix 1/4 cup sugar, salt, pepper, paprika, garlic powder, onion powder, ground mustard and cayenne powder and season the ribs.
3) Smoke for 4 hours away from high flames*.
4) Remove ribs from the grill. Turn temperature up to 225°F. Add remaining 1/4 cup sugar to apple cider, cover ribs with mixture and butter.
5) Remove ribs from foil and liquid. Baste the ribs with BBQ sauce and return them to the 225°F grill for 1 hour.
*The original method is 3-2-1, where the first step only takes 3 hours, however for my grill and preferences I prefer 4 hours for the first cook.

Thanks for sharing this recipe. I always use a WiFi thermometer to monitor the internal temperature of the ribs so that they can keep moist and tender.
